Hoping for a slice of victory

GRAY’S Bakery, Kerang, will join hundreds of bakeries vying for the title of
Australia’s best vanilla slice in Merbein tomorrow.

One of the few local
bakeries worth their crust, the co-owners Janine and Chris Gray are the only
registered entrants in the Merbein Great Australian Vanilla Slice Triumph for
the Swan Hill/Kerang region, according to organisers.

Entrants for the past
three years, the bakery is yet to find their own slice of success, but have
taken third places in pie and cinnamon scroll competitions elsewhere.

“We do
know it has a huge impact on a bakery and the town itself, I would absolutely
love to win it,” Janine Gray said.

“You put your awards in your front window
— it’s what customers look for,” she said.

Ms Gray said there was minor
tweaking of their entry from year to year, but essentially it was the everyday
recipe sold in store.

“Occasionally we do tweak our our recipe with the
public, see what response you get, do something different, and modify it a
little bit each year.”
