Victorian butchers set to meat their match

SWAN Hill butcher Greg Sait has blitzed this year’s regional heats of the Victorian Sausage King Awards, snagging six different gongs.

Sait’s Family Butchers were the clear wieners in three categories: Gourmet Lamb Sausage, Continental Italian Sausage and Homemade Kabana.

“I suppose sausages are my specialty,” Mr Sait said.

“We make so many varieties — they seem to sell really well.”

The Campbell Street butcher shop has a rotating sausage system with five or six different snag flavours available every day, out of a possible 20.

Mr Sait favours ingredients like basil and coriander and follows a ‘fresh is best’ mantra.

The 18-year veteran of the butchering world now has his eye on the state finals, to be held in July.

For someone who deals with so many types of meat it is hard to pick a favourite cut, but being crowned the Sausage King has led Mr Sait to admit that there is a clear crowd winner.

“The gourmet lamb sausage is the best seller,” he said with a grin.
