NYAH West butcher Leo Miceli has revealed the secret to his recent success which saw him awarded first prize at the Australian Meat Industry Victorian Regional Sausage King awards.
Mr Miceli was crowned Sausage King in the continental class for his spiced sausage — an Italian recipe that’s been handed down four generations.
It was the first time Mr Miceli had entered the Victorian regional awards.
The veteran butcher, who has run the Nyah West butchery since 1997, said his success was all down to his chili sauce.
“It’s a pretty basic recipe — a lot of people make the mistake of grinding the meat too fine,” Mr Miceli said.
“I grind it really coarse and it’s the chili sauce too, you’ve got to get the proper one, preservative free.
“Don’t mix it with beef. It is 100 per cent pure pork.”
Mr Miceli will look to continue his winning streak at the Royal Melbourne Show in September.
